VEGETARIAN

This is a very basic Risotto recipe to make a plain, white Risotto. You can use this as a base for other risotto's if you wish, for example the Mushroom Risotto on this website




INGREDIENTS





FOR THE RISOTTO

6 oz (170 g) Arborio Rice
6 oz (170 g) Finely Chopped Onion
2 Cloves of Garlic Finely Chopped
1/2 oz (15 g)Unsalted Butter
2 Tablespoons (28 ml) Dry White Wine
Olive Oil
1 1/2 Pints (840 ml) Vegetable Stock
3 Tablespoons grated Parmesan Cheese

FOR THE VEGETABLE STOCK

1 Medium Sized Potato
1 Medium Sized Carrot
1 Medium Sized Onion
2 Cloves of Garlic
1 Stick Of Celery
1 Bay Leaf
1 Small Bunch of Parsley
12 Black Peppercorns
10 Fl. oz (300 ml) Dry White Wine
2 Pints (1.2 Litres) Water





PREPARATION





THE RISOTTO

Start by chopping everything first. Once you start, you will need all the ingredients to hand, as you will need to stir the risotto continuously. Also, do not wash the rice.

In a large pan, gently fry the onion and garlic in the olive oil. We need them to be soft, and translucent.

In a separate pan, bring the Vegetable stock to simmering point. If you haven't already made some, the recipe is at the end of this page.

Now add the rice to the onions and stir so the grains are well coated with the oil, which should take a couple of minutes only. Add the white wine and stir until absorbed.

You can now start adding the hot stock one ladle at a time, waiting until each ladle full has been absorbed before adding the next. Stir continuously. It is important that the stock is hot, otherwise the rice will stop cooking when you add it.

After about 15 minutes the rice should be cooked and the risotto should have a soft, creamy consistency. Season to taste.

Add the butter and parmesan and stir vigorously to incorporate. The risotto should then look creamy and shiny. Serve with more parmesan to sprinkle over the top.

VEGETABLE STOCK





You do not have to be exact about quantities here, use what is at hand. Roughly chop everything and put in a pan with the water.

Bring to the boil and simmer for 20 minutes. Then add the wine, bring back to the boil briefly to drive off the alcohol, and leave to cool.

You can use this straight away, but if you can leave it sitting around for a few hours but if you can leave it sitting around for a few hours before straining the liquid from the vegetables, the flavour will improve.

PASTA



SERVES 2 AS A MAIN COURSE

A Classic recipe from the Lazio region of Italy, found on most Italian restaurant menu's the world over. Traditionally it is made with Guanciale, which is dried pigs cheek. As this is a little difficult to find in our local supermarket, we substitute pancetta, which you should be able to find in your local delicatessen.

As the eggs in the recipe are barely cooked, be careful who you serve this to. Not to pregnant ladies, children or other people who may be at risk.





INGREDIENTS






7 oz (200 g) Spaghetti
2 Eggs
2 Tablespoons Grated Parmesan Cheese
4 or 5 Slices of Pancetta
3 fl. oz Double Cream
4 Tablespoons of Olive Oil
Salt
Freshly Ground Black Pepper





PREPARATION





This all happens very quickly, so put some water on the heat for the pasta. With lots of salt. When it is boiling rapidly, add the pasta, bring back to the boil and cook for however long it says on the packet. Usually 8 to 10 minutes.

Cube the Pancetta, and fry gently in the olive oil until crisp. Remember that to get any type of bacon crisp, you don't turn the heat up, you fry gently. This should take about 7 to 10 minutes.

Beat together the eggs, grated parmesan and the cream. Season with salt and pepper. When the pancetta is crisp, take it off the heat, let it stand for a moment, then stir it and the oil into the beaten egg mixture.

Drain the pasta when ready, and then combine with the sauce. The idea is that the sauce coats the pasta, but the eggs do not cook, so stir quite vigorously to get rid of some heat from the pan. The last thing we need is scrambled eggs.

Serve with extra parmesan separately.

Pancetta

Pancetta is a sort of Italian bacon, made from cured belly pork. If you can't find it, you could use Streaky Bacon, although it really isn't the same.





























INGREDIENTS

250g mascapone cheese
200g (or 227g*) cream cheese
3 large — 4 small eggs

1/3 cup sugar
2.5 cups strong black coffee
1/3 cup caster sugar, extra
25ml Kahlua / Tia Maria
400g sponge fingers
1/4 cup cocoa powder

1. Using electric beaters, beat mascapone and cream cheese until smooth. Add egg yolks.
2. Using electric beaters, beat egg whites untiil soft peaks form. Add sugar gradually, beating constantly, until mixture is thick and glossy and the sugar is dissolved.
3. Add one-third of the egg whites to the cheese mixture to lighten it. Fold in the rest gently.
4.

Combine coffee, sugar and alcohol. Make extra coffee mixture if you like your tiramisu moist, with lots of coffee. Dip sponge fingers till soggy.

5. Line two 8-cup capacity bowls with half the sponge fingers. Sift 1 tbsp of cocoa powder over the fingers. Cover with half the cheese mixture. Repeat with dipped sponge fingers, cocoa powder and cheese mixture.
6. Refrigerate overnight to allow the flavours to blend. Dust with cocoa powder just before serving.
* 227g may seem like an odd amount, but thats 1 pack of Krafts’ Philadelphia Cream Cheese



INGREDIENTS

Pavlova:
3 egg whites at room temperature
2/3 cup superfine sugar
1 tsp white vinegar
1 tsp cornflour

Berries:
Assorted berries
Lemon juice
Brown sugar (2–3 tbsp of sugar for every lemon)

Crème anglais:
1 – 1.5 cup milk
3 – 4 egg yolks
2 – 3 tbsp sugar
vanilla beans or extract (optional)

Berry salad.
1. Hull and quarter strawberries. Wash blueberries and raspberries.
2. Put them in a salad bowl and add enough lemon juice to make a light sauce.
3. Add brown sugar to taste. Toss and chill.
Pavlova
1.

Preheat the oven to 120°C.

2. Put egg whites into a glass or metal bowl (I use a scrupulously clean plastic bowl). Add vinegar. Beat till fluffy.
3. Add sugar gradually and continue beating until stiff peaks form. This is when the beater holds a nice peak when you lift it from the egg whites. Do not overbeat.
4. Separate the egg whites onto baking sheets lined with parchment paper. Shape them into round cloud-like shapes.
5. Bake for 45 minutes watching to make sure that it does not brown too much. How dry it should be is a matter of taste; I like mine chewy inside.
Crème anglais
1. Whisk egg yolks, sugar and vanilla into the milk and warm very gently whisking all the time.
2. The sauce is done when it starts to thicken. Do not be tempted to continue heeating it because it will thicken further once it is cool. And it will curdle if it is overheated.
3. Chill till ready to serve.
Serve pavlova with chilled berries and crème anglais.


INGREDIENTS

600g Mussels (with shells)
200 ml cheap white wine

2 1/2 cups fish stock from cubes
Tiger prawns, any amount
Squid rings, any amount
2 Tbsp olive oil
75g butter
1 white onion, finely chopped
1 tbsp grated ginger
3 cups arborio rice
Lemon juice from half a lemon

2 cloves garlic, finely chopped
1/2 tsp saffron threads soaked in 2 tbsp warm water
2 small tomatoes, diced
1 tbsp chopped fresh basil (or more)
Lots of chopped fresh parsley
2 tbsp grated parmesan
1/4 cup fresh cream

The Steps:
1. Heat wine and fish stock in pot and add mussels. Cook, covered, for 3 minutes. Remove mussels, try not to take any of the stock with them. Discard shells.
2. Do the same with the prawns and squid. Don't overcook. After, remove any sediments in the stock and keep it simmering on low fire.
3. Heat olive oil and 1/3 of the butter in saucepan, then add onion, garlic and ginger. 2 minutes later, add rice and stir to coat.
4. Add 1/2 cup of the stock, stirring constantly over medium heat until liquid is absorbed. Add saffron and soaking liquid. Continue adding stock, 1/2 cup at a time, stirring constantly until all the stock is absorbed by the rice.
5. Return seafood to the rice and add tomato, basil and parsley. Remove from heat and stir in parmesan, cream, remaining butter and lemon juice. Mix well and serve.

Laksa Lemak

LAKSA LEMAK

Prawn Stock
20 large tiger prawns
1Tbsp peanut oil
1.5 liters water

Rempah
15 shallots, peeled and minced
6 garlic cloves, peeled and minced
10 to 15 dried red chillies, deseeded, soaked till soft, drained and minced
10 candlenuts, chopped
3 lemongrass stalks, tender inner stems only, minced
Fresh tumeric, 1 thumb-length piece, peeled and minced
Galangal, 1 thumb-length piece, peeled and minced
1Tbsp belachan (shrimp paste)
2 Tbsp coriander seeds

4Tbsp dried shrimp, soaked till soft and drained
6Tbsp peanut oil
600ml coconut milk, preferably fresh
1Tbsp salt, or more

2Tbsp gula melaka (palm sugar), or more

500gm fresh laksa noodles, or thick vermicelli

Toppings
20 raw prawns, shelled and de-veined (left from making prawn stock)
Large handful of beansprouts
2 fried fishcakes, sliced thickly
2 taupok (deep-fried tofu puffs) squares, sliced thickly
8 quail's eggs
Large handful of finely shredded cucumber
Handful of finely shredded laksa leaves (daun kesom)

To Serve: Sambal Goreng
3 garlic cloves, peeled and minced
2 candlenuts, chopped
10 shallots, peeled and minced
10 dried red chillies, soaked till soft and minced
1Tbsp tamarind pulp soaked in 100ml water
3Tbsp peanut oil
1Tbsp tomato puree
1 tsp salt
1Tbsp gula melaka (palm sugar)

For the prawn stock: Peel and de-vein the prawns. Set them aside. Only the heads and shells are needed for the stock. Heat the oil over a medium flame in a stockpot. Stir fry the prawn heads and shells till bright orange and slightly caramelised. Add the water and bring to the boil. Turn heat down and simmer gently for 1 hr. Strain and reserve.

For the rempah: Except for the shrimp paste and coriander seeds, pound all the ingredients for the spice paste according to the order listed with mortar and pestle. Ensure that each ingredient is thoroughly assimilated before adding the next. Wrap the shrimp paste in a small square of aluminium foil and toast it over a small flame in a dry pan until aromatic - about 2-3 minutes. Unwrap, add to spice paste, and incorporate. Toast the coriander seeds over a small flame in a dry pan until aromatic - about 60 seconds. Grind to a fine powder with a spice/coffee mill. Stir the ground coriander into the spice paste.

For the laksa broth: Grind the softened dried shrimp to a fine powdery consistency. Set aside. Heat the oil in a large saucepan over a medium flame until fairly hot. Add the rempah and fry for about 10 minutes - be patient and stir constantly until the paste becomes thick, fragrant, several shades deeper, and the oil separates from the paste. When the paste is sufficiently cooked, add the ground dried shrimp. Stir for 1 minute. Add the reserved prawn stock, coconut milk, salt and palm sugar. Slowly bring to a simmer. Simmer uncovered for a few minutes, adjusting seasoning with more salt or sugar as needed. When broth tastes right, turn off heat, cover, and set aside.

Bring a big pot of water to a rolling boil. Scald laksa noodles for 15 to 30 seconds. Drain in colander and arrest cooking by placing under a running tap for a few minutes. Drain again and set aside. Using the same pot, bring some fresh water to a rolling boil. Blanch whole prawns until cooked, about 2 minutes. Lift out with a slotted spoon and split in half lengthwise. In the same water, scald bean sprouts, fishcake slices, and taupok slices in separate batches for 10 seconds each, lifting each out with a slotted spoon. Set aside. Place the quail's eggs in a small pan of salted cold water. Bring to a boil over brisk heat and boil for 1 minute before draining and cooling under a running cold tap. Shell carefully. Cucumber and laksa leaves should be shredded as close to your serving time as possible.

For the sambal goreng (this can be made several days in advance): Pound the garlic with mortar and pestle to a pulp. Pounding each ingredient till incorporated before adding the next, pound the candlenuts, shallots and chillies. Set paste aside. Strain the tamarind water; reserve the liquid and discard the seeds left in sieve. Heat oil in medium saucepan over medium heat till fairly hot. Add reserved paste, turn heat down to low, and slowly fry for about 10 minutes until thickened, a deep ruddy brown, and the oil separates from the paste. Be patient; the spices must be adequately cooked to mellow and lose their raw taste. Now add the reserved tamarind water, tomato paste, salt and sugar. Stir constantly over a low heat until reduced to a jammy consistency, adjusting seasoning to taste. Scrape into a bowl. Cool. Chill till needed.

To serve: Portion noodles and beansprouts between deep bowls. Top each bowl with prawns, fishcake, taupok, quail's eggs, and cucumber. Bring laksa broth to the boil. Ladle boiling broth into waiting bowls. Scatter the shredded laksa leaves on top and serve immediately. Let diners help themselves to the sambal.

Hokkien Prawn Mee Soup

HOKKIEN PRAWN MEE SOUP

Prawn and Pork Stock
*1Tbsp peanut oil *200gm pork fat, cubed *15 shallots, thinly sliced *300gm pork ribs *300gm meaty pork bones *1 pork tail *5 dried red chillies *At least 4 cups of loosely packed prawn heads and shells, including those of 12 large tiger prawns (to be used later for topping) which have been de-veined and set aside *3 litres water *1 tsp salt *1 tsp black peppercorns *3 cloves *1 cinnamon stick *1 star anise *2 Tbsp gula melaka (palm sugar), or more *2 Tbsp light soy sauce, or more

Heat wok over high flame until very hot. Add oil and pork fat dice, which will release a lot of oil as it crisps and browns. Remove, drain well on paper towels, and set aside (to be used later for topping). Now fry the shallots in the same wok till golden brown. Remove, drain well on paper towels, and set aside. Turn flame down to medium-high. Stir-fry the pork ribs, bones, tail and chillies (in batches if necessary) till crusty and golden brown. Remove and place in a roomy stock pot. Set aside. Turn flame down to medium. Add prawn heads and shells to the wok, frying slowly until shells are crisp, caramelised and well-coloured. Remove and add to stock pot. Add water, salt, peppercorns, cloves, cinnamon, and star anise to stock pot. Bring to the boil. Turn down to a leisurely simmer. Simmer for 4 to 6 hours, until stock tastes richly flavoured and is the colour of tea. Add palm sugar and soy sauce to taste. Simmer another 30minutes. Strain stock. Set aside.

Toppings & Garnishes
*12 large tiger prawns, de-shelled and de-veined (from making the stock earlier), poached 2 minutes in simmering salted water till cooked, drained, sliced lengthwise *Fried pork fat cubes (from making the stock earlier) *Fried shallots (from making the stock earlier) *6 pork spare ribs, cubed, rubbed with 1 Tbsp soy sauce and steamed over high heat for 2 hours (add resulting juices to stock; set meat aside) *2 finely sliced fresh red chillies, placed in a small bowl with 3 Tbsp light soy sauce *Large handful of beansprouts, topped and tailed *Large bunch of kangkong (water convolvulus, or morning glory; substitute spinach if unavailable), thoroughly rinsed, woody stems discarded, leaves plucked with a little hollow tender stem attached *Pinch of bicarbonate of soda (baking soda)

Prepare all the toppings and garnishes as described up to the red chillies macerated in soy sauce. Set aside in individual bowls. Blanch beansprouts and kangkong separately in a large pot of boiling water into which a tiny pinch of bicarbonate of soda has been added (this helps retain colour). Drain very well and set aside.

*1 kg Hokkien mee (fresh yellow egg noodles)
*200gm beehoon (dried rice vermicelli)

When ready to eat, blanch Hokkien mee and beehoon separately in large pot of boiling water. Drain well. Divide both into deep roomy serving bowls. Top with prawns, pork cubes, beansprouts, kangkong, fried shallots and fried pork fat. Bring soup to the boil. Ladle over each bowl of noodles and serve immediately. Let diners help themselves to the chillies and soy sauce. Alternatively, bring everything out on separate serving dishes for everyone to help themselves, including the hot stock in a large pitcher or bowl.

Canh chua cá

Vẫn vị chua của nước cốt me, mùi thơm của cá, nhưng món canh chua cá của Thái Lan thường có thêm vị ngọt của các loại rau củ đi kèm. Đây là món canh được người Thái ăn trong bữa chính với cơm trắng.

Nguyên liệu

- 1 khúc cá lóc 200g,

- 50g đậu đũa, cà rốt,

- 50g bông cải trắng (hoa lơ trắng),

- 1/2 củ cải trắng,

- 1 muỗng cà phê đường, 1 muỗng cà phê nước mắm, 1 muỗng canh nước cốt me, dầu ăn.

Cách làm

Để có nước dùng cá ngon bạn cũng cần chuẩn bị: 3 trái ớt khô bằm nhỏ, 1 muỗng canh sả bằm nhỏ, 1 muỗng cà phê sa tế tôm, hạt nêm.

Cà rốt, củ cải gọt vỏ tỉa hoa, xắt lát mỏng. Đậu đũa tước xơ, ngắt đoạn khoảng 4 cm. Bông cải trắng rửa sạch, tách nhánh.

Cá lóc xắt lát khoảng 1cm chiên vàng. Cho cà rốt, củ cải, bông cải trắng vào nồi nước dùng cá đun khoảng 5 phút, nêm nước mắm, nước me, đường. Tiếp đến cho cá chiên, đậu que vào, đun thêm 2 phút, múc ra tô.

Mì Ý xốt mù tạt và thịt bò

Nguyên liệu: (1 phần ăn)

Thịt bò: 120g
Nấm rơm: 50g
Mì spaghetti: 80g
Ớt chuông đỏ: 20g
Gừng thái chỉ: 5g
Hành tím băm: 10g
Tỏi băm: 5g
Ngò tây băm: 10g
Bơ: 15g
Kem béo: 50ml
Mù tạt vàng: 10ml
Muối: 1/2 muỗng cà phê
Tiêu: 1/2 muỗng cà phê
Rượu cherry: 1 muỗng xúp
Bánh mì bơ tỏi: 1 miếng

Cách chế biến:

Thịt bò ướp chút muối, tiêu và mù tạt cả 2 mặt. Chiên thịt vừa chín tới, cắt thịt dài cỡ ngón tay. Mì luộc chín, trộn bơ tỏi. Nướng bánh mì với bơ tỏi. Cho bơ vào chảo nóng, tiếp tục cho hành tím, tỏi, gừng, ngò tây, ớt chuông, mù tạt, nấm rơm vào, nêm gia vị cho vừa ăn. Thêm rượu cherry vào xốt, sau cùng cho kem béo vào. Nấu xốt hơi sánh, cho thịt bò cắt sợi vào đảo đều. Cho mì ra dĩa, cho xốt và thịt bò lên mì, xếp miếng bánh mì nướng cạnh bên.

Cá ngừ hấp ớt Hàn Quốc


* Nguyên liệu:

- 1 khúc cá ngừ
- 3 quả ớt xanh Hàn Quốc
- 1 thìa súp nước mắm
- 1/2 thìa cà phê tiêu
- 1 thìa cà phê bột nêm
- 1 thìa cà phê dầu ăn
- 2 thìa cà phê đường
- 3 củ hành tím

* Thực hiện:

- Rửa cá ngừ, để ráo nước, ướp với nước mắm, bột nêm, tiêu, đường, dầu ăn. Rửa ớt, chẻ đôi theo chiều dọc, bỏ hạt, thái thật nhuyễn. Lột vỏ hành tím, thái mỏng.

- Đặt xửng lên bếp, xếp đĩa cá vào, rắc ớt Hàn Quốc lên trên cá, đậy nắp lại, hấp khoảng 15 phút.

Spaghetti carbonara


* Nguyên liệu:

- 8 lát thịt heo xông khói
- Mỳ Spaghetti: 50gr
- Lòng đỏ trứng gà: 4 cái
- Phô-mai bột: 4 cái
- Kem béo: 250ml
- Hành tây: 1 củ

* Thực hiện:

- Chiên giòn thịt heo xông khói, vớt ra, cho hành tây thái hạt lựu, kem béo vào đun sôi, mỳ luộc chín, bóp vụn thịt heo xông khói cho vào chảo, đổ hỗn hợp sốt vào, thêm phô-mai, mỳ và lòng đỏ trứng gà vào. Trộn đều tất cả.

Thịt kho Quảng Đông


* Nguyên liệu:

- Thịt ba rọi: 1kg
- Cải thìa: 200g
- Đường phèn: 60g
- Ngũ vị hương: 1 muỗng cà phê
- Tai vị: 2 cái
- Nước tương: 5 muỗng xúp
- Muối: 1 muỗng cà phê
- Bột nêm: 2 muỗng cà phê
- Rượu hoa tiêu: 3 muỗng xúp
- Tỏi: 4 củ nhỏ
- Gừng: 4 miếng
- Hành lá: 2 cọng
- Nước: 1 lít

* Cách chế biến:

- Thịt cắt khối 4x6cm, chiên sơ cho săn. Cho thịt vào nồi và toàn bộ gia vị, đổ nước vào nấu liu riu trong 2 tiếng. Đến khi thịt chuyển sang màu cánh gián, nước hơi sánh là được.

Giò heo chua ngọt



Nguyên liệu

2kg giò heo (lấy từ phần khuỷu xuống)

1 lít dấm đỏ

200g xì dầu, 1 thìa muối

300g đường, gừng

Thực hiện


Giò heo làm sạch, chặt miếng lớn, chần nước sôi. Dấm + đường + muối nấu sôi, cho gừng đập dập vào nấu 5 phút, sau đó cho giò heo vào luộc chín mềm.

Để nguội, vẫn tiếp tục ngâm trong nước luộc, khi nào dùng lấy ra. Món này ăn nguội, vị chua ngọt. Giò heo chín mềm, da còn dẻo không nát mới ngon.

Gân bò thấu



Nguyên liệu

1kg gân bò trong

1 nhánh gừng nhỏ, 2 trái ớt sừng cay

250ml nước mắm ngon

500g đường

100ml dấm đỏ, 1 thìa muối

Thực hiện

Gân bò rửa sạch cho vào nồi luộc chín, khi luộc nêm muối, gừng đập dập. Gân bò nấu mềm, vớt ra xả với nước lạnh, để ráo, cắt khúc vừa ăn.

Nước mắm + đường nấu tan + dấm để nguội. Cho gân bò vào keo thủy tinh sạch cho gừng và ớt đập dập vào, ngâm khoảng 3 ngày là ngon. Có thể
để trong một tháng không hư. Không nên để tủ lạnh gân sẽ bị cứng, chỉ để nơi thoáng mát và dùng đũa sạch để gắp khi muốn dùng.

Cơm dấm cuốn nhân thập cẩm



Nguyên liệu

150g gạo Nhật (nấu thành cơm)

1/2 muỗng canh dấm Nhật

1 muỗng cà phê đường

1 muỗng cà phê muối

Trứng gà, dưa leo, giây bí kho, cá ngừ kho,trứng tôm, rong biển khô, tôm biển khô, gừng đỏ, củ sen ngâm dấm.

Thực hiện

Trộn hỗn hợp dấm, đường, muối với nhau, cho vào trộn chung với cơm đã nấu, dùng quạt cho cơm nguội đi. Cho cơm lên 1/2 lá rong biển khô, tiếp theo cho dưa leo cắt khúc, trứng gà, trứng tôm, giây bí kho, cá ngừ kho, củ sen ngâm dấm lên.

Sau đó dùng mành tre cuốn lại. Ăn kèm với nước tương, mù tạt và gừng đỏ.

Tôm chiên giòn


Nguyên liệu

5 con tôm tươi cỡ lớn

1 quả trứng gà

100g bột mì Nhật

1/2 củ cải trắng mài

1/2 củ gừng mài. Nước tương và nước đường

Thực hiện


Đổ dầu vào chảo. Cho tôm bỏ vỏ chừa phần đuôi lại, bỏ phần chỉ đen, khứa phần bụng tôm để khi chiên tôm không bị co lại. Cho trứng gà, bột nước vào quậy đều. Tôm tẩm bột khô trước, cho vào bột nước rồi cho vào chảo dầu. Chiên cho tới khi tôm vàng đều rồi vớt ra.

Nước sốt

Cho 4 muỗng canh nước dùng, 2 muỗng cà phê nước tương, 1 muỗng nước đường quậy đều, thêm ớt cắt nhuyễn nếu thích ăn cay.

Bò xào sa tế



Nguyên liệu

200g thịt bò

100g hành tây

20g tôm khô

Ớt sa tế, tương hột

Đậu phộng rang

Tỏi, ngũ vị hương

Chuẩn bị

Thịt bò cắt lát mỏng, ướp 1 muỗng cà phê tỏi, 1/2 muỗng cà phê ngũ vị hương, 1 muỗng cà phê sa tế, 1 muỗng canh xì dầu, 1 muỗng canh đường, hành tây cắt múi.

Chế biến


Phi tỏi xào tôm khô, tương hột, nêm đường. Đặt chảo xào thịt bò chín, đổ hỗn hợp tương bột vào. Nhắc xuống rải đậu phộng trang trí hoa tỉa bông cà rốt.

Xốt cà tím

Nguyên liệu

500g cà tím

2 thìa dầu ăn

6 nhánh tỏi giã nhỏ

6 miếng gừng thái nhỏ

hành tươi thái nhỏ

1 thìa ớt tươi băm nhuyễn

4 thìa nước

Nguyên liệu làm nước xốt: 2 thìa nước tương; 1 thìa rượu trắng; nửa thìa đường, nửa thìa muối; 1 thìa dầu mè.

Thực hiện

- Bổ dọc trái cà tím, cắt miếng dài khoảng 5 cm.

- Trộn các nguyên liệu làm nước xốt vào một chiếc bát nhỏ.

- Đun nóng chảo dầu, cho cà tím, tỏi, gừng vào xào chín trong khoảng 4 phút.

- Cho hành tươi và ớt vào, nấu thêm 2 phút. Sau đó đổ nước xốt vào, đảo nhẹ cho cà tím thấm gia vị. Cho nước vào. Vặn nhỏ lửa và đun trong vòng 5-6 phút. Sau đó dọn món ăn ra đĩa. Món này ăn nóng, kèm với rau mùi.

Sườn kho thơm

Vật liệu

300g tàu hũ ky loại dày, tươi hoặc 300g thịt sườn trong bọc nylon của Đài Loan.

1/2 trái thơm + tiêu + muối + đường + bột ngọt + tỏi tây + nước tương + 5 củ kiệu + dầu ăn.

Cách làm

Chuẩn bị

Thịt sườn trong bọc nylon: ngâm nước 15 phút, xả sạch, để ráo.

1 muỗng cà phê tiêu

1 muỗng xúp tỏi tây bằm nhuyễn

1 muỗng xúp xì dầu

2 muỗng xúp nước màu thắng

Để thịt thấm 30 phút.

Thơm: cắt miếng vừa ăn

Tỏi tây: bóc vỏ, bằm nhuyễn

Kiệu chua: lặt rửa sạch, bằm nhuyễn.

Chế biến

Chảo để nóng cho 2 muỗng xúp dầu + 2 muỗng xúp đường thắng hơi ngả màu cho tỏi bằm + kiệu vào phi vàng cho thịt vào đảo đều + nước lạnh sâm sấp thịt + thơm. Khi tất cả chín mềm nêm lại cho vừa ăn.

Xà lách trộn thịt bò

Nguyên liệu

200gr thịt bò, thái miếng vừa
200gr rau xà lách, rửa sạch
2 thìa súp hành tím thái mỏng
1 thìa súp tỏi thái mỏng
1 thìa súp sả bào
4 thìa súp giấm
2 thìa súp đường
1 thìa súp dầu ăn
1 thìa súp tương ớt
1/2 thìa cà phê tiêu
1 thìa súp bột nêm

Thực hiện

Thải mỏng thịt bò, ướp với bột nêm, dầu ăn, tiêu, để 10 phút.
Cho chút dầu ăn vào chảo không dính, đun nóng, phi thơm tỏi, cho thịt bò đã ướp vào xào nhanh tay, thịt bò vừa chín nhắc xuống.
Pha giấm đường, dầu ăn, tương ớt, bột nêm, hành tím, tỏi, sả bào.

Cá rán sốt thơm

Nguyên liệu

1 con cá hanh (khoảng 800gr)
1/2 củ hành tây
1/2 quả ớt chuông xanh
1/2 quả thơm
2 quả cà chua
1/2 quả ớt sừng
4 thìa súp tương cà
1 thìa súp tương ớt
1/2 bát nước dùng
1 thìa súp bột nêm
2 thìa cà phê tỏi xay
1 thìa súp bột chiên giòn
Hành lá, rau mùi (ngò)
Dầu ăn

Thực hiện

Cá làm sạch bỏ mang, để ráo nước, lăn qua bột chiên giòn.

Đun nóng dầu, phi thơm tỏi, cho cá vào rán vàng vớt ra để ráo dầu.

Cắt hành tây, ớt chuông, thơm, cà chua, ớt sừng vừa ăn.

Phi thơm tỏi với chút dầu ăn. Cho hành tây, ớt chuông, thơm, cà chua vào, nêm tương ớt, tương cà, nước dùng, bột nêm vừa ăn. Cho chút bột năng pha loãng vào để tạo độ sánh.

Nguyên liệu

- 3 con mực ống rửa sạch, thấm khô nước.

- 500ml nước.

- 2 ½ thìa nước tương Nhật (như Kikkoman).

- 1 thìa rượu sake.

- 1,5 thìa đường, 1 ít vỏ quýt khô, gạo sushi vừa đủ.

Cách làm

Ướp mực với hỗn hợp nước tương, rượu sake, đường và vỏ quýt khô, để khoảng 10 phút cho ngấm.

Bật bếp đun nồi mực. Khi nước sôi, hạ nhỏ lửa, đun kỹ cho đến khi mực mềm. Vớt mực ra, thả vào nước lạnh, rửa sạch lại, thấm khô.

Tiếp tục đun hỗn hợp trong nồi cho cạn bớt nước làm nước sốt.

Khi cơm đã chín, nhồi cơm vào trong lòng mực, để khoảng 10 phút cho nguội bớt. Cắt mực thành những miếng vừa ăn, bày ra đĩa, rưới một chút nước sốt lên trên món ăn.

Cơm nắm thập cẩm Nhật Bản



Nguyên liệu

300g gạo Nhật (nấu thành cơm)

1 muỗng cà phê dấm Nhật

2 muỗng cà phê đường

1/2 muỗng cà phê muối

Cá tươi các loại: Cá hồi, cá ngừ, mực tươi, cá bóng mú, tôm tích, bạch tuộc, trứng cá hồi, trứng cavia, thịt ghẹ, trứng tôm.

1 ít mù tạt, gừng đỏ, 2 muỗng cà phê nước tương Nhật

Thực hiện

Trộn hỗn hợp dấm, đường, muối cho đều, cho vào trộn chung với cơm đã nấu. Quạt cho cơm nguội bớt. Các loại cá dùng dao thái mỏng khoảng gần bằng 2 đốt tay. Sau đó dùng tay nắm cơm chừng nửa miếng cá hình chữ nhật, cho cá lên trên cơm sao cho đẹp mắt.

Phần trứng cá hồi, cavia, ghẹ và trứng tôm cũng nắm cơm chừng 1/2 miếng cá hình chữ nhật. Sau đó dùng miếng lá rong biển khô cuốn cơm lại.

Dùng dưa leo trang trí lên và cho trứng cá lên. Tương tự làm giống nhau chỉ khác phần ghẹ, cavia, trứng tôm. Cuối cùng cho ra đĩa, ăn cùng với nước tương, mù tạt và gừng đỏ.

Cơm dấm cuốn cá hồi sống



Nguyên liệu

150g gạo Nhật

1 muỗng canh dấm Nhật

1 muỗng cà phê đường

1/2 muỗng cà phê muối

1/2miếng rong biển

1 lá tía tô

2 lát cá hồi sống

1 muỗng cà phê trứng cá hồi sống

Thực hiện

Trộn hỗn hợp dấm, đường, muối với nhau rồi trộn chung với cơm đã được nấu chín và để nguội. Trải một lớp cơm mỏng, cho một ít mù tạt lên cơm, cho lá tía tô, cho cá và trứng cá hồi lên, dùng tay cuốn lại giống hình cái phễu. Ăn chung với nước tương mù tạt và gừng đỏ.

Bò, lợn viên xốt chua cay

Nguyên liệu

- 100gr thịt bò,

- 50gr giò sống (thịt lợn xay nhuyễn),

- 100gr ớt Đà Lạt loại nhỏ,

- 1/2 bát nước dùng,

- 2 thìa súp tương ớt,

- 1 thìa súp tương cà,

- 2 thìa súp bột nêm,

- 1 thìa cà phê tiêu,

- 1 thìa súp tỏi băm.

- 1 thìa súp dầu ăn,

- 1 cây boa-rô (tỏi tây), 1/2 củ cà rốt.

Thực hiện

Rửa sạch thịt bò, để ráo nước, cho vào máy xay thật nhuyễn. Tiếp đến, cho giò sống vào, thêm chút tỏi băm, tiêu và bột nêm, trộn thật đều, vo viên bằng quả chanh nhỏ. Rửa tỏi tây, thái lát mỏng. Gọt vỏ cà rốt, thái khoanh. Ớt Đà Lạt rửa sạch.

Đun nóng dầu ăn, phi thơm tỏi băm, cho thịt viên vào rán sơ. Sau đó, cho ớt Đà Lạt, cà rốt, nước dùng vào, đun sôi. Cho tương ớt, tương cà, bột nêm, đường vào đun khoảng 15' cho đến khi hỗn hợp vừa sánh. Cho tỏi tây vào, nhấc xuống.

Cơm gà phố Tàu

Đùi gà: 300g

Cách chế biến:

Đùi gà rửa sạch, ướp tỏi, đường, dầu hào, nước tương, tiêu để 15 phút cho thấm. Tiếp theo khìa đùi gà với ngọn lửa nhỏ, thấy nước cạn là được. Sườn chìa nướng mè

Nguyên liệu: (4 phần ăn)

Sườn non heo: 600g
Tương ớt: 2 muỗng xúp
Tương cà: 2 muỗng xúp
Mật ong: 1 muỗng xúp
Nước mắm: 1 muỗng cà phê
Hành tím băm: 100g
Tỏi băm: 20g Tiêu: 1/2 muỗng cà phê
Mè trắng: 1 muỗng xúp

Cách chế biến:

Sườn heo rửa sạch, cắt dọc từng cọng xương, chặt đôi. Dùng dao nhọn lóc thịt kéo về phía đầu sụn. Ướp tất cả gia vị vào sườn cho thấm. Nướng sườn trên lửa than. Sườn chìa nướng ăn với tương ớt.
