Deep Fried Bananas

Deep Fried Bananas

2 Servings

Ingredients:

1/2 cup tapioca flour
4 tsp. rice flour
1 tsp. salt
4 tsp. sugar
6 oz. water
1/2 cup grated coconut
4 firm bananas
vegetable oil for deep frying

Directions:

1. In a bowl, mix together tapioca flour, rice flour, salt, sugar, water and grated coconut until evenly blended.

2. Peel bananas. Slice each banana lengthwise; then cut into 3 to 4 inch pieces.

3. Dip banana slices in the batter.

4. Heat the oil for frying. Fry each banana piece until golden brown.

5. Sprinkle grated coconut over bananas before serving.
