Tiramisu - Recipe


INGREDIENTS

1 17.5 ounce container marscapone cheese
2 tablespoons orange liqueur, such as Triple Sec or Cointreau
1 tablespoon dark rum
3 tablespoons sugar
1 teaspoon vanilla extract
1 cup heavy cream
24 ladyfingers
1 1/2 cup brewed expresso
6 ounces semisweet or bittersweet chocolate, finely chopped

1. In a large bowl, combine the marscapone, orange liqueur, and rum. Then gradually blend in the sugar.

2. In a chilled bowl, combine the vanilla extract and the cream, and whip until it forms soft peaks. Fold this into the marscapone mixture.

3. Place half of the ladyfingers in a flat baking dish, and pour half of the expresso over them. Let the ladyfingers moisten for about 10 seconds, turning them often. Carefully lift them out of the pan and arrange them in a single layer in a 12 x 6-inch baking pan.

4. Spread half the marscapone mixture over the ladyfingers, and sprinkle with half the chocolate. Repeat the process with the remaining ingredients, creating 2 layers of ladyfingers.

5. Cover and refrigerate for at least 1 hour. Serve on individual plates.

Serves 10.

HELPFUL HINTS: If you can’t find marscapone cheese, you can easily make your own.

Just combine the following and beat with a mixer until smooth and creamy:

2 8-ounce packages regular cream cheese
1/2 cup heavy whipping cream
5 tablespoons regular sour cream
